The Story Behind Our Panettone: A Passion-Driven Masterpiece

When we think of holiday traditions in Italy, Panettone often comes to mind. This dome-shaped sweet bread has roots in Milan, Italy, dating back to the Middle Ages, and has become an Italian holiday staple. Originally a luxurious, celebratory treat shared only on special occasions, Panettone has evolved over centuries, with bakers refining its recipe and perfecting the fluffy, fruit-studded texture that has made it iconic.

At Lina’s, our Panettone is a labor of love, crafted by master baker Peter Wegmann.

After two years of meticulous research, testing, and refining, Peter has created a Panettone that’s as rich in flavor as it is in craftsmanship. Handcrafted locally in Calgary, this Panettone is made with zero preservatives or artificial flavors and relies on a sourdough starter that Peter carefully nurtured. The addition of real lemon and oranges—cooked down with the skin for intense flavor—is one of Peter's secrets. The fruit is soaked in white wine, adding complexity to each bite.

Peter’s journey with Panettone is a story of passion and determination. He spent hours reading about fermentation, connecting with master bakers, and working to achieve the perfect balance of flavor and texture. With a finely tuned pH and a carefully honed recipe, Peter has created a Panettone where science and intuition come together beautifully.

Now available at all Lina’s stores, our Panettone is a symbol of Peter’s dedication to quality and tradition.

If you’re lucky enough to spot him at one of our locations, don’t hesitate to ask him about his masterpiece—he’d be thrilled to share his journey with you!

DID YOU KNOW?

Traditional Panettone is so tricky to make that in Italy, master bakers often refer to it as a "four-day bread."

The dough requires three rounds of rising and careful control over temperature and humidity to get that perfect, airy texture and slight sweetness. This careful process is part of why authentic Panettone is a holiday-only treat, as it takes patience, skill, and passion to make it just right!
